Love and Muffins

We just finished a wonderful Faith Lift Ladies event where Janet shared about the heart and love of God, so appropriate for this time of year. All the ladies had a wonderful time. They shared with me how special they felt as they entered seeing all the decorations and food that had been prepared for them. The candle light and the roses at each table lying as if He had just been there, lit the candle and left the roses just for them. We learned much that day about the heart and love of God and with that I thought a reprint of a previous reflection of that special day of love would be appropriate. I also had many requests for the recipe of the gluten free muffins I brought for the occasion so you will find that at the end of this repost. I hope you enjoy.

 

This Special Day Of Love

This morning I got up early on this special day of love in hopes of seeing my husband before he left for work but alas I missed him by minutes. I did find the most beautiful Valentine’s Day card waiting for me on my laptop though. Guess he knew I’d see it there. lol After reading it my heart was just filled with love and thankfulness to God for bringing him into my life. He truly is the closest model of the love of God in flesh I could receive here on earth.

As I thought about love on this special day of love, my heart was so longing to know more of the heart of God, to really comprehend and understand the love of God for us. What kind of love is it that causes the God of the universe, Lord of Lords and King of Kings to be mindful of us? What kind of grace is it that continually forgives us over and over and over and over again when we ask in sincerity? What kind of love was it that caused the God of the universe to lay down His life for us? What kind of love is it that would cause Paul to write in Romans 8:38&39 For I am persuaded, that neither death, nor life, nor angels, nor principalities, nor powers, nor things present, nor things to come, Nor height, nor depth, nor any other creature, shall be able to separate us from the love of God, which is in Christ Jesus our Lord. What kind of love is it that makes sure we never have to be separated from it? I know the term is agape but I’m talking about the depth.

I’m not sure that I will ever be able to comprehend the depth of that kind of love. I sooo want to. I’m sure it will be a life long journey for me to the center of the heart of God. I pray I get there someday. I pray you do as well.

On this special day of love and everyday Father, I pray you help us to love well.

Thank you Father for teaching me. I so need it every day.<3

 

Love and Pumpkin Muffins (Gluten and Sugar Free)

3 eggs, beaten

1/4 c canned organic pumpkin

1/2 c butter or coconut oil, melted

1 tsp pure vanilla extract

1 banana, mashed

1/2 c almond flour

1/4 c coconut flour

pinch of salt

1/4 tsp baking soda

1/4 c or so milk

1 tbl pumpkin pie spice ( I used apple pie spice as I did not have pumpkin )

3 c grated carrots

1/4 c raisins

1/4 tsp stevia or more if you like it sweeter

Preheat oven to 350*F

In a large mixing bowl, whisk together the eggs, pumpkin, butter or coconut oil, vanilla, and banana. Mix in the almond and coconut flour, salt, baking soda, pumpkin pie spice, carrots and raisins. Stir until well mixed. Fill paper muffin cups until full as these muffins do not rise with baking.

Bake 35 to 40 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

And of course we prepare and serve these with love as well. ;)
